THE CONCEPT
Located in the Financial District in Old Toronto, Supernova Ballroom is a low-waste fizzy cocktail bar. It was started in the second half of 2019 by the Trash Tiki and Trash Collective team, who work to reduce the environmental impact of bars. Supernova Ballroom features fun sparkling drinks that use local, low waste products (e.g. using citrus juice, zest, rinds) and has a funky 70’s theme. It has classic green library lights, a cool colorful sign hanging over the long fully stocked bar which is an interesting contrast to the classic building’s sleek and spacious layout with high ceilings and stone walls.
THE VISIT
I went at 7pm on the Saturday night before Christmas and it was pretty much empty, which the bartender told us was normal for this time of year. A few other patrons came in and out for a drink throughout the time we were there.
We picked a table along the wall and ordered a Bishop’s Sacrifice with Beefeater gin, yellow chartreuse liqueur, bergamot and lavender whey, lemon, and soda and a Groove Machine with Altos tequila, Dolin Blanc vermouth, lemon verbena soda, and fermented pear.
Later we had a glass of white wine.
WINNERS
Cocktails: great flavor! The Bishop’s Sacrifice was very fruity and the Groove Machine was light and fresh with an ample helping of a very delicious salt mix on the side.
Space/concept: I really like the idea behind this bar - it's both creative and thoughtful and unlike anywhere I'd been to before. I really liked the atmosphere and the message behind it.
COULD BE BETTER
Wall seating: I loved that they have stone walls and they integrated it into the bar very well. The pillows were also a great cozy touch and fit in well with the décor. However, as it was quite a bit higher than the table/other chair + there was a wide footrest which jutted out between the wall and the table, you were sitting quite high and far away from the table and other people. Having either a table or putting the footrest under the table (which already had a bar running underneath) would make it a bit more cozy.
Wine (white): Supernova definitely revolves around its cocktails and I appreciated that they offered wine. I only had one of the whites but it wasn’t my favorite.
FINAL VERDICT
I loved Supernova Ballroom - they had a great ethos, spacious and sleek yet comfortable and fun space and the drinks were great (the food looked great too). Would definitely come back next time I’m in Toronto!
